Our Story
At Blackbird Cafe & Baking Company, we bring over 20 years of experience in the restaurant industry. Over the years, we’ve held just about every position you can think of—working in everything from dive bars and breweries to delis, corporate chains, fast food spots, hotels, and fine dining establishments.
Owning our own place has been a dream of ours for a long time!
Shay & Gordo first met while working in Downtown Toledo back in 2009 and have been together ever since. Their shared love for food and hospitality has taken them all over the world—to Italy, Germany, Ireland, the Czech Republic, the Dominican Republic, Amsterdam, France, the UK, and across the U.S.
As passionate foodies, they travel to explore new places and flavors—and bring those inspirations back with us. Our menu reflects that, with many items named after and inspired by the people, places, and experiences that have shaped our journey.
All of our breads are made from naturally leavened sourdough, and we make everything in-house—from our pastries and cookies to our syrups, sauces, and dressings.
Every item we serve is made with a focus on quality and flavor.
